First we tackled the cake. The flavours we leaned towards were caramel, banana and chocolate. So the cake here is caramelized banana cake with deep notes of jaggery toasty, moist and without any need of eggs & butter. We also experimented with a creamy element and have made a 'custard' with jowar and house made cashew milk with a touch of hazelnut
