Whilst many Rums do use Cocoa Beans within the distillation process the Ruby Cocoa Bean is unfermented (the process which caused Cocoa Beans to turn Brown) which is what causes the Red Pink colour of the Rum and gives a Fruitier flavour. Plenty of Sweet Brown Sugar notes coming through with underlying Cocoa and
