Production takes place in a small shed in Keilor, Melbourne, surrounded by an acre of vines. All production is completed by hand, on site, with help from family and friends. Calyx Neb Noir 2019 vintage comes from and equal blend of Nebbiolo and Pinot Noir. The whole bunch Pinot Noir and destemmed Nebbiolo are co fermented and left on skins for three months before heading to oak.
