Gravelly loam soils, 30 year old vines. Handpicked, chilled, hand sorted, whole bunch pressed to barrel and naturally fermented in five barrels of french oak. The natural fermentation took over 12 months to complete and was in a constant state of flux. Full malolactic with regular lees stirring. Bottled with no fining and a light filtration. Vegan
